Elaboration:
Fermentation in steel and concrete tanks and wooden vats. Aged on lees for 4 months.
Tasting notes:
The visual phase shows a bright straw yellow colour with greenish reflections. The aroma, of great intensity, is elegant, fresh and complex. It shows a marked fruity tone, which covers the range of stone fruits (peach), white fruits (pear), citrus fruits (lemon, grapefruit). Also, aromas of fennel, scrubland and an aniseed, balsamic background are appreciated. All this on a mineral note. In the mouth, notes of fresh fruit appear again. Unctuous, sweet and elegant with a soft touch of final bitterness, characteristic of the Verdejo variety. It has a great structure that favours its persistence. The retronasal is complex and intense.
